SWEET POTATO DIP | |
3/4 lb. sweet potatoes, peeled 2 lb. onions, finely chopped frying oil salt, to taste for the onions sugar (optional) Boil the sweet potatoes until very tender, drain and cool. Add salt to taste and sauté the onions with frying oil until soft and translucent. Put over absorbent towels to take out excess oil (I prefer them with the frying oil). Mash the sweet potatoes like a puree, add the onions and mix very well. This dip can be served at room temperature or cold from refrigerator. You can add sugar to the sweet potatoes to make the dip with a distinct sweet/salty flavor if the potatoes are not very sweet. Submitted by: Luis DE Santis - Venezuela |
