YAMS/SWEET POTATOES WITH PECANS 
This is a big hit at our family gatherings, even among those who say they don't like candied yams (of the "canned-and-topped-with-marshmallows" variety). It is almost like a cross between pecan pie and sweet potato pie. Hope you enjoy it as much as we do!

4 cups cooked, mashed yams/sweet potatoes*
1/2 cup sugar
2 eggs
1/2 tsp salt
4 tbsp. (1/2 stick) butter, softened
1/2 cup milk
1/2 tsp. vanilla
cinnamon

TOPPING:

1/2 cup brown sugar
1/3 cup all-purpose flour
2 tbsp. butter
1/2 cup pecan halves

Preheat oven to 325°F.

Combine the cooked yams/sweet potatoes and the sugar. Beat the eggs and add to the yams.

Mix in the rest of the ingredients in the order given, then put in a baking dish.

For the topping, mix the brown sugar and the flour then cut in the butter. Sprinkle on top of the yams, then place the pecan halves on top of that.

Bake at 325°F for 30 minutes. Serve warm.

Note: You can cook the yams/sweet potatoes in the microwave. Just poke and cook like you would baked potatoes, 8 to 12 minutes for most microwaves on High power.
