SWEET POTATO CASSEROLE FOR A CROWD | |
5 lbs sweet potatoes (baked 1 hr, cooled, peeled 1 cup half & half 1 stick butter, softened 3 eggs 1 cup granulated sugar 1 cup brown sugar, packed 1 tbs cinnamon 1 tbs nutmeg 1 cup pecans, chopped 1 cup coconut (optional) 1 shot (or 2) dark rum (optional) 1 tbsp. vanilla mini marshmallows (for topping) Mash the sweet potatoes in a large mixing bowl. Combine all ingredients and mix well. Spoon into a deep casserole dish. Bake 45 minutes at 375°F. Top with mini marshmallows and bake for another 15 minutes. Submitted by: Jeffrey Sprague |
