RED RICE 
16 oz. crushed tomatoes
1 c. long grain rice
1/2 c. water
2 tbsp. tomato paste
1 1/2 tsp. salt
1/2 tsp. ground red pepper
3 slices bacon, diced
1 c. diced onions
1/2 c. diced green pepper

In medium saucepan combine tomatoes, rice, water, tomato paste, salt and red pepper, cover and set aside. In medium skillet, cook bacon over medium high heat until crisp. Remove with a slotted spoon and drain on paper towels, add onions to skillet and saute, stirring occasionally, until translucent, about 5 minutes. Add green pepper and cook 1 minute more. Add vegetables to rice mixture. Cover and bring to a boil over medium high heat, stirring. Reduce heat and simmer, covered, stirring occasionally, 25 to 30 minutes, until rice is tender. Stir in bacon.
