SUMTER RED RICE 
1 med. onion, diced small
1 bell pepper, diced small
2 tbsp. melted butter
6 oz. smoked sausage, cut into 1/2 inch chunks
2 1/2 c. tomato puree
3/4 c. tomato paste
1 tbsp. sugar
3 c. water
2 tbsp. oregano
2 tsp. thyme
1 tsp. crushed red pepper
3 c. rice
4 tbsp. melted butter
Salt and pepper to taste

Saute onions and green peppers in melted butter until onions are transparent. Add sausage and continue to saute 5 minutes. Add next 9 ingredients and simmer 15 minutes. Mix rice, red rice sauce and melted butter together in a casserole dish. Cook 1 hour at 250 degrees and then another hour at 325 degrees or until rice is tender.
