COUNTRY PORK RIBS AND RICE 
2 lbs. country style ribs
2 c. uncooked rice
1/2 c. butter
Season to taste

Boil until tender, then cook rice in juice from cooked ribs until rice is dry.

Season the country ribs with salt and pepper to taste.
Brown in a dutch oven pot on high, about 5 minutes per side.
Remove from pot, set aside.
Add about 1 cup each diced onions, tomatoes, green peppers, red pepper, yellow pepper (if you like heat a jalapeno is good to add at this point sliced or diced however you prefer)
3 chopped cloves of garlic
salt and pepper to taste
Saute until tender
Add 2 cups uncooked rice and stir to combine until rice becomes opaque.
Pour in 12 oz of beer then 3 cups of water or broth of your choice, bring to boil.
Replace the ribs into pot and allow to simmer for 30 minutes or until rice is cooked.
