GERMAN APPLE PANCAKES 
3 eggs
1/2 c. flour
1/2 c. milk
1 tbsp. butter melted
1/4 tsp. salt

FILLING:

1/4 stick butter
1/3 c. brown sugar
2 med. cooking apples, cord, peeled, sliced thinly
1/4 tsp. each cinnamon and nutmeg

For pancakes beat eggs in medium sized bowl with hand mixer or wire whisk until foamy. Beat in flour, milk, butter and salt until well blended. Let stand 1 hour at room temperature.

Preheat oven to 450 degrees. Pour batter into well buttered 9 inch pie plate. bake 20 minutes. Reduce to 350 degrees. Bake 8 to 10 minutes longer until puffed and golden. Meanwhile in heavy skillet melt butter. Stir in sugar until dissolved. Stir in apple slices and spices. Saute 3 to 5 minutes until apples are tender and crisp.

To serve remove pancake from oven. Spread apples over the center. Drizzle with sugar mixture. Cut into wedges. Serve immediately.
