GERMAN APPLE PANCAKES 
2 tbsp. butter
2 med. apples, peel, core, and slice
3/4 tsp. cinnamon
1/4 c. firmly packed brown sugar
3 eggs
1/4 c. flour
1/2 c. milk
1/2 tsp. salt

Melt butter in 9 or 10 inch skillet with oven-proof handle (to make oven proof handle, wrap aluminum foil securely around handle). Arrange apples in single layers in butter. Combine 2 tablespoons brown sugar and cinnamon; sprinkle over apples. Cook over medium heat, stirring frequently, until apples are slightly soft (5 to 6 minutes).

Beat eggs, milk, flour, and salt; pour over apple mixture. Bake at 450 degrees for 8 minutes. Remove from oven; sprinkle remaining 2 tablespoons sugar over pancakes. Return to oven; reduce heat to 375 degrees. Bake until evenly brown, 8 to 10 minutes. Loosen pancakes around edge. Cut into wedges. May be served with bacon or sausage.
