PUFFED APPLE PANCAKES 
2 tbsp. unsalted butter
2 lg. eggs
6 tbsp. all purpose flour
6 tbsp. milk
1/2 golden delicious apple, sliced thin and tossed with 2 tbsp. firmly packed brown sugar and 1 tbsp. fresh lemon juice
Maple syrup as an accompaniment

Divide butter between 2 (1 cup) shallow oven proof dishes and melt in a preheated 425 degree oven. In a bowl, combine the eggs, flour and milk. Stir just until combined (batter will be lumpy). Pour batter into the dishes and arrange apples slices in a spoke - like pattern in the center. Bake at 425 degrees for 15 to 20 minutes or until puffed and golden brown. Serve with maple syrup. Serves 2.
