PUFFED APPLE PANCAKE 
2 tbsp. butter
2 lg. eggs
6 tbsp. all purpose flour
6 tbsp. milk
Yellow Delicious apple
2 tbsp. dark brown sugar
Fresh lemon juice
Maple syrup

Place butter in shallow ovenproof dish (about 1/2 quart) and melt in 425 degree oven. In bowl combine eggs, flour, and milk. Stir batter until just combined. Set aside. Peel and slice apple and toss with sugar and lemon juice. Pour batter is oven dish and arrange apples evenly in batter. Pour sugar mixture over top. Bake at 425 degrees for 15 to 20 minutes until puffed and golden brown. Serve with maple syrup.
