PINEAPPLE TAPIOCA PUDDING 
1/2 c. minute tapioca
1 (8 oz.) can crushed pineapple
1 c. pineapple juice
1/4 tsp. salt
1/2 c. sugar

Drain crushed pineapple. Add enough water to the drained juice and the pineapple juice to make 4 cups liquid. Add to tapioca in saucepan and let set about 5 minutes. Add salt and cook over medium heat while stirring occasionally until tapioca is clear. Add sugar and stir until dissolved. Stir in crushed pineapple. Serves 8-10.
