MY MOM'S OLD FASHIONED TAPIOCA
PUDDING
 
3 heaping tbsp. lg. round tapioca
3/4 c. water
4 c. milk
3 eggs, separated
1 c. sugar
1 tsp. salt
1 tsp. vanilla
1/4 c. sugar
Pinch of salt

Soak tapioca in water overnight. In the morning, add the tapioca to the milk and cook in a heavy kettle very slowly over low heat until tapioca is clear.

Beat egg yolks with the 1 cup of sugar and salt. Slowly add to milk mixture. Cook a little longer and add vanilla. Pour into a large casserole. Whip the egg whites until stiff. Add 1/4 cup sugar and a pinch of salt. Place meringue over pudding and brown in a slow oven. Cook pudding slow.
