GERMAN APPLE PANCAKES 
3 lg. eggs
3/4 c. milk
3/4 c. flour
1/2 tsp. salt
1 1/2 tbsp. butter

FILLING:

1 lb. tart apples
1/4 c. butter
1/4 c. sugar
Cinnamon
Nutmeg

Preheat oven to 450 degrees. Bet eggs, milk, flour and salt until smooth. In a heavy skillet melt 1 1/2 tablespoons butter. When hot pour in batter put skillet in oven. After 15 minutes; reduce temperature to 350 degrees. Bake 10 minutes. Pancake should be brown and crisp. If pancake puff to large bubble pierce thoroughly with fork during first 10 minutes.

FILLING: Slice apples. Saute lightly in 1/4 cup butter. Add 1/4 cup sugar. Season to taste with cinnamon and nutmeg. When pancake is ready slide onto platter. Pour in apple filling, cut and serve immediately.
