TOMATO CROWN FISH 
1 1/2 lbs. fish fillets
1 1/2 c. water
2 tbsp. lemon juice
2 lg. fresh tomatoes or canned ones, sliced
1/2 green pepper, diced
2 tbsp. onions, minced
1/2 c. bread crumbs
1 tbsp. oil
1/2 tsp. basil
Pepper to taste

Freshen fish several minutes in a mixture of water and lemon juice. Place fish on greased pan, season lightly with pepper. Place sliced tomato, green pepper and onion over fish. Mix bread crumbs, oil and basil. Sprinkle evenly over vegetables. Bake at 350 degrees for 10 to 15 minutes. Serves 6. Calories: 240 per serving, 3.5 grams fat, 50 milligrams cholesterol.
