“BANANA OATMEAL COOKIES” IS IN:
NEXT RECIPE:  BLUEBERRY BANANA BREAD

BANANA OATMEAL COOKIES 
3/4 cup oatmeal
3/4 cup sugar
1/4 cup milk
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup nuts or raisins
3/4 cup vegetable oil
1 egg
1 tsp. baking soda
1 tsp. nutmeg
2 small very ripe bananas
1 1/2 cups flour

Preheat oven to 350°F.

Combine ingredients in order listed. Drop by the tablespoonfuls onto a greased cookie sheet.

Bake 10-15 minutes (depending upon size of cookies). Watch carefully and do not overbake.

It was quite good, but my sister and I made a few alterations: we had no oil on hand, so we substituted that with melted butter. We used 3 cups of oatmeal, as the batter was really runny. Instead of greasing the pans, we just put the cookies on tinfoil. They were easy enough to get off. The cookies had a nice banana flavor - looks like we don't always have to make banana bread once our bananas get overripe.

Excellent, soft, great tasting cookie that tastes like banana bread. This recipe is quick and easy. Ten minutes was plenty of time in my oven.

This recipe was not very sweet, which was nice. I made a cream cheese filling and made cookie sandwiches. Ten minutes was plenty in my oven.

Great, easy recipe! The cookies aren't too pretty, but they taste just like banana bread. I have prepared this recipe several times because my kids love it. It doubles easily. I have also used Splenda instead of sugar.
