ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. peeled, grated zucchini
1 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1 c. chopped nuts (opt.)
1 c. raisins (opt.)

Preheat oven to 350 degrees. Beat eggs until foamy, add oil, sugar, zucchini and vanilla; mix well. Use wooden spoon. Add flour, salt, baking soda, baking powder and cinnamon; mix well. Add chopped nuts and/or raisins. Pour into greased and floured pans. Bake 45 minutes to 1 hour. Yield: 2 loaves. Double every for 4 loaves.
