ZUCCHINI SOUP 
This is very good!

5 Italian sausages, skin removed and cooked (I use hot)
1/2-3/4 cup Ditalini, cooked per pkg. directions (salad macaroni)
3 cloves garlic, minced
1 medium onion, chopped
3 or 4 small zucchini, diced
2 (28 oz. ea.) cans diced tomatoes (Italian style)
1 (28 oz.) can tomato sauce
1 can water (use the empty tomato sauce can)
1 (15 oz.) can beef broth (Swanson)

Sauté garlic, onions and zucchini til onions are translucent but not brown. Set aside.

In a large pot add tomatoes, tomato sauce, water, cooked sausage and beef broth, bring to a boil. Add diced zucchini, onions and garlic and reboil, reduce heat and add cooked macaroni.

Serve with crusty Italian bread.

This is the best zucchini soup recipe I have tried so far, it's easy to make and delicious! The sausage adds a nice flavor to the dish. I used hot Italian sausages which gave it a bit of spice but you can use regular ones if you prefer. The pasta is a great addition as well. I will definitely be making this again.
