GROUND BEEF MINESTRONE SOUP 
1 lb. lean ground beef
1 med. onion, chopped
1 (1 lb. 12 oz.) can whole tomatoes
1 qt. beef stock (use bouillon cubes)
1 c. uncooked macaroni, soy or wheat
1 c. zucchini, sliced (fresh or frozen)
1 (10 oz.) pkg. frozen mixed vegetables or leftovers
1 (15 oz.) can kidney beans, drained
3 tbsp. red wine vinegar
Parmesan or Romano cheese, grated

Brown meat with onion in soup pot, then add tomatoes and bring to boil. Reduce heat and simmer, uncovered, for 15 minutes breaking up tomatoes with spoon. Add stock, bring to boil. Add macaroni and reduce heat. Simmer, uncovered for 10 minutes, then add zucchini, veggies, beans, seasoning and vinegar. Simmer covered, for 10 minutes. Salt and pepper to taste. Serve with grated cheese. Serves 6.
