PAN FRIED FISH 
1 lb. fish fillets, steaks or sm. dressed fish
1 tbsp. water
Fine bread crumbs or corn meal
Salt and pepper
Flour
1 egg, beaten
Fat or oil

Season both sides of fish with salt and pepper. Roll in flour. Add water to egg. Dip fish in egg mixture, then roll in crumbs or corn meal. Heat fat about 1/8 inch deep in a heavy pan. Fry fish slowly until brown on one side. Turn cooking time will be 10 minutes or more depending on the thickness of the fish. Yields: 4 servings.
