PAN FRIED FISH 
1 lb. orange roughy
1 c. unseasoned bred crumbs
1 c. crushed Ritz crackers
1 egg
1/4 c. milk
Crisco

TARTAR SAUCE:

1 c. mayonnaise
2 tbsp. sweet pickle relish
3 tbsp. finely chopped onion

Mix egg and milk. Mix crumbs and crackers. Dip fish into milk then into crumbs. Fry over medium heat until medium brown. Place on cookie sheet in oven at 375 degrees for 10-15 minutes. Serve with tartar sauce and fresh lemon.

TARTAR SAUCE: Mix all ingredients and chill.

I just finished making this recipe for dinner. My husband said it was the best he's ever had. Great flavors and nice crisp crust. I didn't have any ritz crackers, so I used cheez-its and it added a little more flavor.
