DELUXE FRIED FISH 
About 2 lb. fresh fish
1 1/2 tsp. salt
1 1/2 c. pioneer baking mix
2 c. flour
Dash of red pepper
Salt to taste
Corn oil
Deep frying pan

Put fresh fish in a bowl and mix the 1 1/2 teaspoons of salt, and cover with water, keep cool. Let set aside about 2 hours, remove and rinse in fresh water; drain. Mix pioneer baking mix in enough water to make a thin batter, put in fish. Remove fish from batter and dip in flour with the pepper and salt. Deep fry in corn oil until golden brown.
