COCONUT PECAN COOKIES 
2 1/4 c. flour
1/2 tsp. baking soda
1 tsp. salt
1 c. shortening (not butter)
1/2 c. white sugar
1 c. brown sugar
2 eggs
2 tsp. vanilla
1 c. coconut (peanut butter chips can be used in their place)
1 c. chopped nuts

Mix sugar, eggs and shortening with beater. Stir in dry ingredients and mix well. By hand, stir in coconut and nuts. Drop by teaspoonfuls onto cookie sheet and bake at 350 degrees for about 12 minutes. Do not overbake.
