COCONUT PECAN COOKIES 
1 c. brown sugar
1 c. sugar
1 c. butter, softened
2 eggs
1 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 1/2 c. uncooked oats
2 c. coconut
1 c. chopped nuts

Cream butter and sugar. Beat in eggs and vanilla. Sift dry ingredients and add. Add all else. Chill. Drop on greased cookie sheet and bake 8 minutes at 350 degrees.

OMG!!! When I first read over this recipe, I was thinking "Uncooked Oats!!!" I want coconut & pecan cookies not oatmeal but....I have made about 5 batches of these cookies and I LOVE THEM. They are the best. I am known for my oatmeal cookies but these have the best of both worlds...oatmeal and coconut and pecans. My sister said, "They are just like lays, you can't eat just one". Try them and you will be hooked. I love you and hate you for this recipe. I have gained my ten pounds back. LOL!

Great tasting cookie. Think I will dip half the cookie in chocolate on my next batch. I baked them for 8 minutes and they were not brown so I put them back in for the 13 minutes someone else suggested and they were a bit overdone to me. I will try something in the middle next time.

I used desiccated macaroon coconut so added another 2 tbsp. butter and 1 tbsp. water. Made into 2 oz. balls, flattened to 1/2 inch thick and froze. Baked frozen patties at 315°F in commercial convection oven for 15 minutes. Turning pan once. Perfect light brown edges and soft interior. Best cookies ever.

Sooo good! Made these in haste to take to BF's dad's house and they were a hit! They raved about these cookies even a month later! Already made 3 batches! and everyone comments how good this recipe is. This is a keeper. I do bake them for about 9-10 minutes- just when they start getting a little brown on the edges. Any longer and the texture doesn't seem right. They will be soft after 9-10 minutes, however they firm up after they are cooled.

I have made these cookies twice now and both times they come out flat and alomst spread out across the pan. I bake all the time and I have followed this recipe exactly. Maybe there should be more flour... These cookies do have a good flavor.

I made this recipe exactly as written with the exception of adding 1/2 cup butterscotch chips and 1/2 cup white chocolate chips - Yummy! I baked them for 10 minutes on a white baking sheet with parchment paper. They were a huge hit! Thank you!
