COCONUT PECAN CHOCOLATE CHIP COOKIES | |
2 1/8 c. flour 1 tsp. baking soda 1 c. softened butter 3/4 c. firmly packed brown sugar 3/4 c. sugar 1 tbsp. vanilla 2 eggs 1 c. coconut 6 oz. chocolate chips 1 c. chopped pecans Mix flour and baking soda and set aside. Combine softened butter with both sugars, mixing until mixture resembles coarse crumbs. Add eggs and vanilla and beat until light and fluffy. On low speed of mixer or using a wooden spoon, gradually stir in flour mixture. Stir in coconut, chocolate chips and pecans. Bake at 325°F on ungreased cookie sheet for 8 to 10 minutes. Do not over cook. Cookies should be light brown and a little soft to the touch. Makes 8 dozen cookies. |
