COCONUT PECAN CHOCOLATE CHIP
COOKIES
 
2 1/8 c. flour
1 tsp. baking soda
1 c. softened butter
3/4 c. firmly packed brown sugar
3/4 c. sugar
1 tbsp. vanilla
2 eggs
1 c. coconut
6 oz. chocolate chips
1 c. chopped pecans

Mix flour and baking soda and set aside.

Combine softened butter with both sugars, mixing until mixture resembles coarse crumbs. Add eggs and vanilla and beat until light and fluffy. On low speed of mixer or using a wooden spoon, gradually stir in flour mixture.

Stir in coconut, chocolate chips and pecans.

Bake at 325°F on ungreased cookie sheet for 8 to 10 minutes. Do not over cook. Cookies should be light brown and a little soft to the touch.

Makes 8 dozen cookies.

I veered from the recipe: I actually put the flour and baking soda mixture in the cookie dough after I set it aside! :-) Delicious cookies. Next time, I will try less sugar, though. They were a little too sweet for me.

I don't know how you are supposed to get 96 cookies out of this. I did it as drop cookies and I got 24.

A really good cookie. Try substituting dried cranberries for the chocolate chips and toast the pecans before mixing. Even better!

I got only 3 1/2 dozens cookies from this recipe by using a 2 tablespoon cookie scoop from William Sonoma and changed the cooking time to 14-15 min. They are good and I will make them again!
