CHICKEN CORDON BLEU 
4 skinless boneless chicken breast halves
4 thin slices Mozzarella cheese
1 tbsp. mayonnaise
4 tsp. chopped parsley
4 thin slices boiled or baked ham
1/4 c. seasoned bread crumbs

Pound chicken fillets until thin. Lay out flat and sprinkle with parsley. Top each fillet with a slice of cheese, then a slice of ham. Roll up tightly. Brush each fillet with mayonnaise and then roll in the bread crumbs. Spray a baking pan or sheet with cooking spray. Arrange the chicken rolls, seam side down, in a single layer.

Bake in a 400°F oven about 30 minutes.
