APPLE CORN MUFFINS 
2/3 c. ground cornmeal
1 1/3 c. flour
1 tbsp. baking powder
2 tbsp. sugar
1 tsp. cinnamon
1/2 tsp. salt
2 eggs, lightly beaten
1/3 c. honey
1/3 c. butter, melted
1 c. grated unpeeled apple

In large bowl combine cornmeal, flour, baking powder, sugar, cinnamon and salt; mix well. Stir in eggs, honey and butter. Stir just to combine; don't overmix. Stir in apple. Fill paper-lined muffin tins 2/3 full. Bake 20-25 minutes at 425 degrees. Yield: 12 muffins.
