SPICY APPLE-CARROT MUFFINS 
1/2 c. non-instant dry mild solids
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1 tsp. cinnamon
2 1/2 c. whole wheat flour
1 c. honey
1 c. safflower or other oil
4 eggs
1 tsp. vanilla
1 c. grated unpeeled apple
1 c. grated carrot
1 c. raisins

1. Preheat oven to 400 degrees.

2. In large bowl combine milk solids, baking powder, salt, allspice, cinnamon, nutmeg, and flour.

3. Combine the honey, oil, and eggs, and stir into dry ingredients. Fold in the apple, carrot, and raisins. Spoon into oiled muffin tins.

4. Bake 15-20 minutes or until done.

Yields about 2 dozen medium-sized muffins.
