CARROT MUFFINS | |
2 eggs or 4 egg whites 1/2 c. Puritan oil 1/2 c. honey 1 tsp. vanilla 1 c. whole wheat flour 2 tbsp. oat or wheat bran 2 tbsp. wheat germ (or 4 tbsp. of one or the other) 1/2 tsp. baking soda 1/2 tsp. baking powder 2 tsp. cinnamon 1 c. grated carrots 1/2 c. nuts or raisins Beat first 4 ingredients well in bowl. Add rest of ingredients except carrots and raisins; mix well, then add carrots and raisins. Bake at 350 degrees for 25 minutes or until toothpick comes out clean. Also works well made into loaves. |
