NIKKI'S PHILLY CHEESE STEAKS
Roast Beef, Provolone Cheese, Onions, Bell Peppers, Worcestershire sauce, olive oil
1 lb nice quality Angus Roast Beef sandwich meat (Castle Wood Reserve is the best)
1 lg green bell pepper
1 medium red onion
1 pkg medium or high quality provolone cheese (cheaper is too oily)
1/4 c. Worcestershire sauce
1 tbsp. olive oil
enough bread to make 8 sandwiches

Set oven to 350°F.

Chop vegetables into any size you personally prefer (smaller, quicker cook; larger, longer cook; I use 1/4 inch slices of both ROUND onion and long strips of bell pepper). Drizzle a large skillet with the olive oil; once oil is hot toss in bell peppers. sauté for 1 minute, tossing constantly; then add the onion, sauté for an additional 1-2 minutes. Remove pan from stove top.

Slice roast beef into 1/2 inch strips and put in pan with vegetable. Add the Worcestershire sauce and toss all ingredients. Pour all ingredients into a casserole dish and then top with the Provolone circles, 8 should cover the entire mixture. Put all ingredients into oven for 5 minutes until cheese is bubbly.

Pepper to taste and serve.

My children love this, I love this. It is quick and simple and can feed my family for around $1.50 a sandwich!!!

"Nice quality Angus beef"? Can you really tell the diference between Angus beef and Charlois or Herford or anything else for that matter? My family raises cattle for a living and I would dare say that the "Angus" breed only has an advantage because of advertising. I have tasted much better beef from other breeds of cattle.

Made ahead of time, put on hard crusty rolls (to avoid soggy sandwiches) and cooled makes an easy addition to my kids school lunchbox. Thanks Nicole
