CHEESE STEAK LAYERED NACHOS 
1 box thin sliced roast beef (I use Steakums)
1/2 medium onion, diced
1 red, green, or yellow pepper diced
salsa (mild, medium or hot)
jalapeno slices (can be omitted)
1 (8 oz.) pkg. shredded Mexican "fiesta" style cheese (or Velveeta cheese, cut into small cubes)
corn tortilla chips
oil (if not using non-stick cookware)

In a fry pan cook steak with the onion and pepper. Cook steak until well done shredding it as it cooks - onion and pepper until soft and or translucent.

Preheat oven to 350°F.

Cover a baking sheet with aluminum foil (for easy clean up) and arrange single layer tortilla chips. Place some of the cheese on the chips with some salsa. Layer the roast beef, onion and pepper mixture on top with jalapeno slices. Layer more of the cheese and salsa on top. Continue alternating layers with cheese and salsa as final layer.

Place in oven and bake at 350°F until cheese is melted and bubbly (10 to 15 minutes).

Serve immediately.

These are perfect for game night! I used plenty of salsa between the layers and made sure I sprinkled lots of cheese on top since I like it bubbly!!
