CHIPOTLE CHEESE STEAK PASTA
chipotle stock
steak (preferably strip steak or London broil)
mushrooms
peppers
onions
garlic
butter
salt and pepper
heavy cream
shredded cheese
penne pasta

Cook and cool pasta according to the directions on package.

Chop 1/2 bell pepper (any color will do), 1/2 of an onion, and 3-4 mushrooms. Set aside for later use.

Wash the cutting board. Thinly slice the steak you would like to use. Set aside for later use.

In a non-stick pan, add 2 tablespoons butter, a pinch of salt and pepper and just about 1/2 teaspoon of freshly chopped garlic.

Turn the stove on medium to high heat. Add the peppers, onions, mushrooms and steak and sauté until everything is cooked.

Deglaze the pan with a splash of white wine. Add heavy cream and Cheddar cheese until sauce is thickened to your liking.

Add 4 oz of pasta (make sure pasta is at room temperature when adding.)

Makes 1 serving.

This was great! My husband and I both really liked it. Very simple to prepare and a great way to use garden fresh veggies! No specific instructions on where to use the Chipotle Stock but I made a version of Chipotle Sauce and added it to the cheese sauce- very very good!
