BROCCOLI, CHEESE AND RICE
CASSEROLE
 
This recipe can easily be doubled for parties!

6 oz. rice
1 (10 oz.) box frozen chopped broccoli
12 oz. shredded cheese divided (9 oz. for recipe, 3 oz. for topping)
1/2 cup bread crumbs
2 oz. butter (for topping)
1 3/4 qt. casserole dish

Cook rice according to package directions. Cook frozen broccoli according to package directions.

In a casserole dish arrange layers of rice, broccoli, and cheese until used up, top with bread crumbs and reserved cheese. Divide the butter over the top in small chunks. Heat casserole in 350°F oven for 20 minutes or until cheese is melted.

Variations: You can add any or all of these: 1/4 cup minced onion, 1/4 cup small chopped green pepper, 1/2 cup sliced mushrooms.
