CARROT MUFFINS 
2 c. flour
3/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
Pinch allspice
Pinch nutmeg
Pinch ground cloves
2 eggs
1/2 c. oil
1 c. grated carrots
1 c. apples, peeled & finely diced
1/2 c. nuts (walnuts)
1/2 c. raisins

Stir together flour, sugar, baking powder, baking soda, spices. Beat eggs until frothy. Add oil, carrots, apples, nuts and raisins. Fold into dry ingredients. Mix 2 minutes. Grease muffin tins or use muffin cups. Pour batter into tins 3/4 full. Bake 20 to 25 minutes in a 400 degree oven. Let rest 5 minutes. Remove from pans. Makes 36.
