RAISIN APPLE MUFFINS | |
1 1/2 c. flour (sifted) 1/3 c. sugar 2 tsp. baking powder 1 tsp. salt 1/2 tsp. ginger 1 egg 1/4 c. soft shortening or oil 1/2 c. milk 1 tbsp. grated lemon rind 1 c. finely chopped cooking apples 1/2 c. raisins Sift flour, sugar, baking powder, salt and ginger. Sift into mixing bowl and make a well in the center. Into the well drop egg and add shortening, milk and lemon rind. Stir, mixing just enough to get dry ingredients dampened. Gently mix in cooking apples and raisins. Have 8 large or 12 medium size muffin cups buttered. Spoon the muffin mixture into them. Bake in a preheated 400 degree oven 20 to 25 minutes, or until they are a rich golden brown. Serve warm with butter or a cream cheese spread. |
