APPLE RAISIN MUFFINS 
3/4 c. vegetable oil
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. all-purpose flour
3/4 tsp. baking soda
3/4 tsp. cinnamon or nutmeg
1 1/2 c. diced apples
1/2 c. raisins
1/2 c. nuts

Preheat oven to 400 degrees. In a large bowl, beat oil and sugar with mixer for 2 minutes. Add eggs and vanilla; beat 1 minute. In another bowl, stir together flour, baking soda and cinnamon. Add dry ingredients to oil mixture; stir to combine. Stir in fruit and nuts.

Spoon batter into muffin cups. I use muffin liners. Bake 20-25 minutes. Cool 5 minutes before removing muffins. These freeze well.
