SWEETER APPLE MUFFINS 
1 egg
1/2 c. milk
1/4 c. vegetable oil
1 c. grated raw tart apple, pared or unpared
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
3/4 tsp. cinnamon

NUT - CRUNCH TOPPING:

1/3 c. brown sugar
1/3 c. chopped nuts
1/2 tsp. cinnamon

Beat egg with a fork. Stir in milk, oil and apple. Measure flour by dip-level-pour method or by sifting. Blend flour, sugar, baking powder, salt and cinnamon; add to egg mixture just until flour is moistened. Batter should be lumpy. Do Not Overmix. Use paper cups or grease muffin cups. Fill cups 2/3 full. Makes 12 medium muffins. Bake at 400 degrees for 20-25 minutes.

Make Nut-Crunch Topping by mixing topping ingredients listed above. Sprinkle on top of the 12 muffins.
