CINNAMON APPLE BREAD 
3 c. finely chopped unpared apples
3 c. flour
2 1/2 c. sugar
1 1/4 c. vegetable oil
4 eggs, beaten
1 tbsp. plus 1 tsp. vanilla
2 tsp. baking soda
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cloves
1/2 tsp. baking powder
2/3 c. raisins
1/2 c. chopped nuts (optional)

Preheat oven to 325 degrees. Generously grease 2 (9x5x3) loaf pans or 18 muffin cups and 1 loaf pan. Beat all ingredients on low speed for 1 minute, scraping bowl constantly. Beat on medium 1 minute.

Pour into pans or fill muffin cups approximately 1/2 full. Sprinkle with cinnamon and sugar if desired. Bake until toothpick comes out clean. Bake loaf pans at 325 degrees for 1 hour or muffins for 25 minutes. Cool 10 minutes before removing from pans. Yield 2 loaves or 18 muffins.
