AUNT MUZZY'S APPLE BREAD 
1 c. sugar
1/2 c. shortening
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
2 c. chopped, peeled apples (about 4 med.)
1/2 c. nuts, chopped
1/2 c. raisins
1 tbsp. sugar
1/4 tsp. cinnamon

Heat oven to 350 degrees. Grease bottom only of 9 x 5 x 3 inch loaf pan. Mix 1 cup sugar, shortening, eggs and vanilla. Stir in flour, baking powder, baking soda, 1 teaspoon cinnamon and salt until smooth. Batter will be thick.

Stir in apples, nuts and raisins; spread in pan. Mix 1 tablespoon sugar and 1/4 teaspoon cinnamon. Sprinkle over batter.

Bake until wooden pick inserted 1 inch from center comes out clean, 50 to 55 minutes. Immediately loosen sides of loaf from pan and remove from pan. Cool completely before slicing. Makes 1 loaf.
