JANET'S DANISH POTATO SALAD 
If you're lazy, you may use store bought dressing, though my homemade dressing puts this salad over the top!

HOMEMADE SALAD DRESSING:

1/4 cup vinegar (I use apple cider)
1/4 cup water
1/4 cup sugar
1/4 tsp. salt
dash of fresh ground pepper
1 tsp. prepared mustard
2 eggs, beaten

Combine vinegar, water, sugar, salt, pepper and mustard. Bring to a boil. Add beaten eggs. Bring to boil until thickened a little. Cool.

Makes 1 cup.

DANISH POTATO SALAD:

1 cup salad dressing (homemade or prepared)
4 cups cooked potatoes, cubed
2 hard-boiled eggs
1/2 cup chopped cucumbers
1 tbsp. minced onions
1 tbsp. chopped green pepper

Add ingredients and mix. Refrigerate before serving.

Serves 4.
