“POTATO SALAD MEXICALI” IS IN:

POTATO SALAD MEXICALI 
This is what you make for a pot luck, picnic, barbeque or a Mexican themed dinner. Can be upsized or downsized accordingly.

3 lb. red potatoes, boiled, cut into chunks and cooled
1 green pepper, diced
1 red pepper, diced
1/2 cup purple onion, diced
1/2 cup salsa
1/4 cup real or imitation jarred bacon bits
1 (14 oz.) can salt-free corn, drained
1 (14 oz.) can salt-free black beans, drained
OR 1 (3.8 oz.) can sliced black olives, drained
1/2 cup shredded Cheddar cheese
1/2 cup shredded Pepper Jack cheese
15 oz. bottle Wishbone Chipotle Ranch or regular Ranch salad dressing

In large salad bowl, combine all salad ingredients. Fold in just enough salad dressing to coat mixture to taste.

Chill several hours for flavors to blend.
