BACON, TOMATOES, AND EGGPLANT 
8 slices bacon, cut in squares
1 eggplant, peeled and cut in bite-sized chunks
3 good-sized tomatoes, chopped coarsely
salt and pepper, to taste

Place bacon in a single layer, if possible, in a cold pan. Cook on medium heat until almost crisp. Add eggplant, tomatoes, and seasonings. Cover and cook on low heat for 20 minutes, stirring occasionally. Adjust seasonings and serve.
