BACON, TOMATO AND MUSHROOM
CHICKEN SANDWICH
 
This is a very simple easy recipe for one! About 420 calories.

PER SANDWICH:

1 small chicken breast, cut into bite-size pieces
1 bacon strip, cut into bite-size pieces
1 tsp. light Italian dressing (Kraft)
1 (4 oz.) can sliced mushrooms, drained
1 Roma tomato, sliced lengthwise
1/4 cup shredded Mozzarella cheese
1 slice bread (I use Arnold double fiber)
salt, to taste
garlic powder, to taste

Set oven to broil.

Place chicken in heated skillet. Season chicken with some salt and garlic powder. Cook chicken over medium heat until white throughout. Remove chicken from skillet and set aside.

Place bacon in skillet and cook until slightly crispy. Do NOT DRAIN GREASE FROM SKILLET! Add the tomato and mushrooms to the skillet. Season with garlic powder and salt, sauté over medium high heat about two minutes.

Turn off skillet, add chicken to bacon, tomato, and mushrooms. Toss to combine the ingredients evenly.

Toast the bread on both sides either in the oven using broil or a counter top toaster. Brush the Italian dressing over one side of the bread.

Place bread on an oven safe dish and top with mushroom mixture followed by the cheese.

Place sandwich in the oven and broil until cheese is melted and bubbly..
