TOMATO MUSHROOM CHICKEN
CASSEROLE
 
1 c. sliced fresh mushrooms
1 med. onion, thinly sliced
2 tbsp. olive oil
1 clove garlic
1 (16 oz.) whole tomatoes, chopped
1 (6 oz.) tomato paste
1/4 c. dry white wine
1 sm. bay leaf
1 tsp. dried basil
1/2 tsp. salt
1/4 tsp. pepper
3 whole boneless chicken breasts

Put first 4 ingredients in large pot. Cover and microwave on high 5 to 8 minutes, stirring once. Stir in remaining ingredients, cover and microwave on high 10 to 15 minutes or until chicken is no longer pink, stirring 2 to 3 times check chicken after 10 minutes. Serve over noodles or rice. Can freeze and reheat to serve in microwave on high 12 to 17 minutes or until hot. Break apart with fork and stir.

Since microwave ovens vary in power, you may need to adjust your cooking time.
