MINI CHERRY CHEESECAKES 
1 (8 oz.) pkg. cream cheese
1/2 c. sugar
1 egg
2 tsp. lemon juice
1/2 tsp. vanilla
Crumbled vanilla wafers or graham crackers
Canned cherry pie filling

Preheat oven to 350°F.

Put cookie or graham cracker crumbs in the bottom of cupcake liners in a muffin tin. Beat cream cheese, sugar, egg, lemon juice, and vanilla until creamy and without lumps. Spoon equal amount over crumbs.

Bake in hot oven for approximately 15 minutes. Make 6 to 9 cupcakes. When cool, top with cherries and refrigerate until ready to serve.

I did the mini cupcakes but I added a twist by adding half a cup of sour cream and instead of vanilla I added coconut extract and cinnamon the filling was delicious but it took 25 minutes instead of 15 to bake. Great recipe.
