PRUNE UPSIDE-DOWN CAKE 
1/2 c. brown sugar (or substitute)
1 1/2 tsp. lemon rind, grated

Mix together; spread on bottom of 9 inch oiled cake pan. Arrange enough stewed prunes to cover bottom. Pour on batter of: 2/3 c. sugar (or sugar substitute) 1 egg, beaten 2 1/4 c. flour 2 tsp. baking powder Dash salt 1 c. milk

Cream butter and sugar; add egg. Mix in dry ingredients alternately with milk. Pour batter over fruit. Bake 50 minutes at 350 degrees F. Turn out upside down.
