WORLD'S BEST PRUNE CAKE 
2 c. sugar
1 c. butter
4 eggs
3 c. flour
1 c. buttermilk
1 lb. prunes
1 c. chopped pecans
2 tsp. baking soda dissolved in 2 tbsp. hot water
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. mace
1/2 tsp. allspice
1/2 tsp. cloves
1 tbsp. vanilla

Cream sugar, butter, eggs (one at a time) and beat well. Then alternate mixing flour, all spices and milk at low speeds. Add prunes, vanilla and LAST add soda dissolved in hot water. Bake at 375 degrees for 30-40 minutes or prick test comes out clean.

ICING:

1/2 pkg. sifted powdered sugar
1 tsp. vanilla
1 c. pecans
1/2 c. butter, melted
1 tsp. coffee crystals dissolved in 2 tbsp. hot water

Mix up to 1 cup of pecans in mixture to desired consistency and spread on cake.

This made a HUGE cake, i only added 2 1/2 cups self rising flour, I will make it again but will leave out the mace and cut back on the spices just a touch. The icing I used a little liquid coffee I had made up plus some espresso.. It was delicious! Also I had some cooked prunes and used about 2 cups. Very moist.
