PRUNE, BANANA, OATMEAL, WALNUT
CAKE
 
1 1/2 c. all purpose flour
1 1/2 c. quick cooking oats
3/4 c. marg.
1/2 c. packed brown sugar
3 to 4 lg. ripe bananas
3 lg. eggs
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cardamon
1 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. vanilla
8 oz. diced prunes
8 oz. chopped walnuts

Beat butter, sugar and eggs until light and fluffy. Beat in mashed bananas and vanilla. Add flour, oats, baking soda, baking powder and condiments. Blend until smooth. Add prunes and nuts. Stir until well combined. Bake at 375 degrees for 45 to 50 minutes in a bundt pan that has been sprayed with Pam. Cool on wire rack for 10 minutes before unmolding. Cool thoroughly. Can be frosted with your favorite frosting.
