OATMEAL CHOCOLATE CHIP CAKE 
1 3/4 c. boiling water
1 c. oatmeal
1 c. lightly packed brown sugar
1 c. granulated sugar
2 eggs
1 stick butter
1 3/4 c. all-purpose flour
1 tsp. baking soda
1 tbsp. cocoa (or a bit more)
3/4 c. chopped walnuts
1 (12 oz.) pkg. semi-sweet chocolate chips

Pour boiling water over oatmeal; let stand for 10 minutes. Add brown and granulated sugars and butter; stir until butter melts. Add eggs and mix well. Combine flour, baking soda, salt and cocoa. Add flour mixture to sugar/oatmeal mixture. Mix well. Add 1/2 package of chocolate chips. Pour batter into greased 9x13-inch pan. Sprinkle nuts and remaining chocolate chips on top. Bake in preheated 350°F oven for 35 to 40 minutes or until toothpick inserted in center of cake comes out clean. No need to frost this cake.
