WALNUT PRUNE CAKE WITH CREAM CHEESE FROSTING | |
1 c. brown sugar 1/2 c. butter 1 tsp. vanilla 1/2 tsp. nutmeg 3 eggs 1 c. flour 1 tsp. baking powder 1/2 tsp. salt 1/2 c. finely chopped walnuts 1 c. chopped stewed prunes (stewed in port wine) FROSTING: 1 (3 oz.) pkg. cream cheese, softened 1 tbsp. butter, softened 1 tsp. vanilla 1 1/2 c. sifted confectioners' sugar Cream first four ingredients. Add eggs, one at a time, beating well. Add flour, baking powder and salt and blend well. Fold in prunes and nuts and spread in a buttered 13 x 9 x 2 inch pan, lined with buttered brown paper. Bake at 350 degrees for 25 to 35 minutes. Cool in pan for about 30 minutes, then remove carefully with a spatula and cool on cake rack. Blend and spread frosting on cooled cake. |
