“GROUND TURKEY ENCHILADAS” IS IN:

GROUND TURKEY ENCHILADAS 
1 1/2 lbs ground turkey
1 pkg frozen spinach - thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese
1 8 oz. block cream cheese
ground cumin to taste

Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.

Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.

Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.

Serve with refried beans and Mexican rice. Sour cream and guacamole are also great additions.

Loved it! Made a few adjustments because we like green enchiladas over red. I was cautious at first because I had never thought of making enchiladas with ground turkey, but it was very good! Will definitely make this again!

Wow!!! This was so yummy!!! I reduced cream cheese to 5 ounces and made 6 enchiladas. Not only was this delicious but very very filling!! I'll DEFINITELY be making this again and again!!!

This has become quite the favorite in my house. Kids love it, hubby loves it, I love it. I skip the diced tomatoes and use enchilada sauce, sometimes use pepper jack if I don't have a Mexican blend cheese on hand. I also use light cream cheese. Very yummy and very easy.

it is one of the best things that i ve cooked in my life... i didnt roll it into the tortilla, i used them flat on the pan, lasagna style, but it is really really good.

This turned out pretty good, I used whole grain tortillas, and they were great! I only used one pound of turkey because I buy the 1-pound rolls of it and didn't want to use just half of one, but next time I will use less cream cheese. I also added fresh cilantro to the filling and toppings. Added fresh tomato, red onion, cumin seeds, fresh garlic, and ground pepper for more flavor.

Be sure to cover the very ends with salsa for consistent texture, unless you like crispy tortilla ends.

I served it with homemade guacamole and instant brown rice, which I mixed with some diced tomatoes and red pepper seasoning.

Ended up making 10 enchiladas, froze left overs in freezer-safe bag, reheated 3 days later, and they were still pretty good!

Wow, this women must know everything!!!!! I think this recipe was just fine the way it is, except I'm a garlic freak so I had to add it. Instead of shooting down someones recipe, why not just add your own if you think its better!

As written, yes a 1. This recipe really irks me. Where does the flavor come from? Cream cheese, tortillas, ground turkey and spinach (frozen at least) is flavorless. So the only flavor your really getting is from the cheese and salsa. TSP of cumin? really? Put in a TBSP, put in some chili powder, cayenne, paprika, ground pepper for gosh sake. Emerils southwest is a great addition to the kitchen. I also put a couple strips of bacon in with the turkey for some aromatics and a smokey flavor. Then, ACTUALLY PUT THIS TOGETHER AND SERVE IT LIKE A CASSEROLE. WHY not? Lay out the tortilla, get some brown rie in there, add your mixture, some of the cheese, even the beans. Why not. I even put a finely chopped onion into the rice and let it sweat in there. Wrap it up and throw it in the oven and follow the directions from there. Make all this food and only put a tsp of cumin into otherwise flavorless food. Try it my way and this is a 5 star recipe.

OMG this was delicious !! I had guests over for dinner and one of them told me it tasted better than a restaurant. second time I made them.. I used hummus instead of cream cheese and it was really good too.. and I added feta cheese one time also... very good recipe and sooo easy to make.

This recipe is excellent and I would highly recommend it. I made the recipe exactly how it was listed and it was just the right amount of ingredients. I also made it without the spinach one time and it was still just as good.

Loved this recipe! Instead of using cream cheese, I substituted with plain low fat yogurt to be a little bit healthier. This recipe made 6 small enchiladas and 2 large ones so it's a great quantity! Can't wait to make again!

This was very good!! My 13 yr. old thought so too... WOW!
The only things I changed were for the salsa I used Mango Salsa (Costco), and I did not have any canned tomatoes, so I used fresh. I cut them up and mixed it in with the salsa. I also added some garlic to the ground turkey while it was cooking.
Overall I give this a high recommendation!!
